The maker of the video has admitted that it’s not real: http://www.davidoreilly.com/blog/2008/08/ihologram/ It’s a pretty cool concept, but unfortunately, it’s not possible with the iPhone since it cannot detect rotation. It’s possible to create the holographic effect by tilting the iPhone similar to the way it’s done in the Mach Dice application.
