The iPhone Dev Team has recently released a beta version of redsn0w, which will hopefully “simplify the jailbreaking of your iPod touch 2G.” Unfortunately, and the reason why it is still being listed as beta is because it requires the user to run it from the command line.
Of course, as with any jailbreaking, use some caution, and in this case if you are not comfortable with command line tools than you may want to hold off for a GUI version which was noted as coming “sometime soon.”
Redsn0w is currently available for OS X, Windows and Linux and can be downloaded for free.
